Alex’s Favorite Green Beans
- 1 1/2 pounds French green beans (haricot verts)
- 1/2 cup slivered almonds
- 1/4 cup butter, divided
- freshly ground pepper
Toast the almonds in a dry skillet until they just start to turn brown, then pour out on to a plate or paper towel and set aside.
Bring large pot of water to boil. Put the green beans in the pot and cook for 3 minutes. Drain.
Put 3 tablespoons of butter in the empty skillet and melt. Don’t let it brown. Toss the green beans in the butter and sprinkle with salt and pepper. Transfer the green beans to a serving dish.
Add the remaining tablespoon of butter to the skillet and when it has melted, add the almonds and mix to coat, then pour the almonds over the green beans.
